10 minute black beans, minimal washing up and uses the bean juice.
- 1 tin of black beans
- 1 onion (chopped)
- 1 garlic clove (chopped)
- 1 teaspoon oregano
- Chilli powder or flakes (1/2 or 1 teaspoon)
- stock cube (veg or chicken) + little water
- Olive oil
Cook off onions and spices in oil for 3 minutes to ‘bring out the flavours’ like you would in a pan. I was skeptical this did anything but it’s important. Onions come out a bit soggy otherwise.
Dump remaining things into pyrex bowl/vessel and microwave on high for 10 minutes. DO NOT DRAIN THE BEANS. The bean juice has lots of flavour and starch that helps the dish.
Think of the bean juice more like a bean gravy.
Serve with rice.
